 Perfect Picnic or Daily Lunch Spreads

 

Try one (or more) of the following 6 sandwich ideas for your next picnic or lunch.

Smoky Tuna

 

1 can solid white tuna in water, drained

 

2 tbsp mayonnaise

 

2 tbsp Dan T's Smoked

 

2 tbsp cilantro, chopped

 

1 tbsp lemon juice

 

mixed greens, washed

 

Mix together first 5 ingredients and serve inside pitas or mini pitas with mixed greens. Serves 2 - 3.

Tangy Salmon

 

1 can red sockeye salmon, drained

 

2 tbsp mayonnaise

 

2 tbsp Dan T's Spiced (or more to taste)

 

1 tbsp lemon juice

 

1 tbsp capers

 

2 tbsp chives, chopped

 

mixed greens, washed

 

Mix together first 6 ingredients and serve inside pumpernickel buns or bread with mixed greens. Serves 2 - 3.

Deviled Egg

 

4 hard boiled eggs

 

2 tbsp mayonnaise

 

1/2 - 1 tsp Dan T's Whitehot

 

2 tbsp chives, chopped

 

2 tbsp salted sunflower seeds

 

arugula, washed

 

salt & peper to taste

 

Mash eggs and mix together with next 4 ingredients. Serve inside pumpernickel bread and top with arugula. Serves 2 -3.

Peppered Canapés

 

1 red bell pepper, cut into strips

 

1 clove garlic, minced

 

1 tbsp olive oil

 

125 g goat cheese

 

100 g roast beef

 

1/4 cup Dan T's Spiced

 

French stick, cut in half

 

Toss red pepper with garlic and olive oil and broil until softened, about 10 min. Soften cheese in microwave for 15 - 20 seconds, add Dan T's Spiced and mix into a smooth paste. Spread bread with cheese mixture, top with beef and red pepper and serve open faced.

Spiced Cheese and Chives

 

1 pkg (250 g) cream cheese

 

1/4 cup Dan T's Spiced

 

1/4 cup chopped chives

 

1/2 cucumber, thinly sliced

 

Microwave cream cheese for 45 ˇ 50 seconds to soften. Mix cheese with Dan T's Spiced until well blended. Add chives and serve on bagels with cucumber slices.

Vegetarian Club Sandwich

 

Cooking instructor Debbie Diament (visit myplacefordinner.com) came up with this spectacular mixture.

 

4 slices grilled red pepper

 

4 slices grilled eggplant

 

4 tbsp feta cheese, crumbled

 

1 small cucumber, finely chopped

 

1 small carrot, grated

 

4 slices plum tomato

 

2 Tbsp Dan T's Raspberry Chipotle

 

6 slices seven grain bread

 

Grill red pepper and eggplant. Set aside. In a bowl, combine feta, lettuce, cucumber, carrots. Set aside.Toast bread slices. Place red pepper, eggplant, spoonful of Raspberry Chipotle, tomato and feta/vege mixture on one slice of toast and cover with another slice of toast. Repeat. And repeat again for 2nd sandwich.

 

Serve with mixed greens. Serves 2.
