Tomato Pasta & Bacon
1 medium onion, chopped fine
4 large cloves garlic, minced
1/4 cup olive oil
1 28 oz can of tomatoes
1 tsp salt or to taste
1 1/2 tbsp Dan T's Inferno Whitehot
10 slices side bacon, cut into matchsticks

In a heavy deep pot, sauté onion and garlic in oil until brown, stirring often, about 10 minutes. Add remaining ingredients, except sausages, and cook uncovered on medium high until sauce is reduced, about 20 minutes. Using a blender or hand mixer, chop tomatoes until sauce is smooth. In a separate pan, fry bacon on medium high, until nearly crisp. Add bacon to sauce. Meanwhile bring water to boil and cook enough pasta for four (about 350g), according to package directions. Drain pasta and toss with sauce. Serves 4.
